    Preheat the oven to 180°C (fan 160°C, gas mark 4). Line two muffin tins with cupcake cases.

    Put the butter and sugar in a bowl and beat until pale and creamy. This could take up to 10 minutes to get a fluffy mixture.

    • 250g Butter (unsalted) softened
    • 250g Unrefined golden caster sugar

    Add the eggs, one at a time, then add the vanilla extract and beat until well combined.

    • 4 Egg(s) (free range)
    • 1tsp Vanilla extract

    Sift and fold in the flours together. Add enough milk for a smooth batter that is of dropping consistency.

    For this step you'll need:

    • 185g Self-raising white flour
    • 60g Plain white flour
    • 185ml Milk

    Spoon the mixture into the cases to about ¾ full. Bake for 20 minutes. Remove from the oven and leave to cool for 5 minutes. Stand the cakes out onto a wire rack to cool.

    Get creative with decorating! To make the fondant icing – Sift the fondant icing sugar into a small bowl, add just enough warm water a drop at a time to give a smooth, thick icing.

    • 300g Fondant icing sugar

    Add a few drops of a food colouring and beat to give an even colour. Spoon a little icing over the cooled cakes so that the tops are almost covered and leave to set for a few minutes. Add any sprinkle before the icing sets completely.

    • Sprinkle decorations

    Colour the sugar paste icing in the colour of your choice. To do this knead the sugar paste icing, add a few drops of food colour and knead again to spread the colour through the icing. Repeat until you get the desired colour.

    • Food colouring (Pick your favourite colours)

    Cut a selection of patterns, letters or numbers for your cakes. Spread some designer icing onto the cakes and cover with the rolled icing shapes. Decorate using sprinkles.

    • Sprinkle decorations
