    Heat the oven to 180°C, (fan 160°C, gas mark 4). Line a cup cake tray with 12 paper cupcake cases.

    Place the butter and sugar in a mixing bowl and beat with a wooden spoon or electric mixer until light and fluffy. Gradually beat in the eggs a little at a time until smooth, adding a little flour if the mixture curdles.

    • 150g Butter (unsalted)
    • 150g Unrefined golden caster sugar
    • 3 Egg(s) (free range) beaten

    Stir in the flour and cocoa powder until smooth. Place heaped dessert spoons in each cupcake case and bake for 20-25 minutes until golden brown and just firm to the touch. Allow the cupcakes to cool completely.

    To make the butter cream; mix the butter and icing sugar together until light and fluffy adding a drop of boiling water if necessary. Divide in half and beat cocoa powder to one bowl to make the chocolate icing.

    • 1 tbsp Cocoa powder

    To make the golfing cupcakes: Spread the cakes with white butter cream. Mix a little green food colouring into two tablespoons of sugar and mix until the colour is even. Sprinkle over the icing. Roll small balls of white sugar paste icing then using the end of a paintbrush make the dimples over the balls and place on the cake.

    • Green food colouring
    • 2 tbsp Unrefined golden granulated sugar

    To make No.1 Dad cupcakes: Spread the cupcakes with chocolate butter icing and decorate with chocolate letters and numbers.

    To make the football cupcakes: Spread the cupcakes with chocolate butter icing. Roll balls of white sugar paste icing and cut in half and place on the cakes. Decorate with a little left over green coloured granulated sugar. The cakes will keep for 3-4 days in a cake tin.
