    Preheat the oven to 200°C (fan 180°C, gas mark 4). Line a 12 hole muffin tin with muffin cases.

    Place all the ingredients except 60g of the cheese in a mixing bowl and mix until just blended.

    For this step you'll need:

    • 350g Self-raising white flour
    • 85g Margarine
    • 1tsp Baking powder
    • 2 Egg(s) (free range) medium, beaten
    • 300ml Milk (semi-skimmed)
    • 2tsp Chives fresh, chopped
    • 1 Courgette(s) coarsely grated
    • 25g Cheddar cheese

    Spoon the mixture into the muffin cases and sprinkle with the remaining cheese.

    For this step you'll need:

    • 60g Cheddar cheese

    Bake for 20 minutes.

    Remove from the oven and allow to stand for 5 minutes before removing from the tin. Best served warm.
