    Preheat the oven to 170°C (150°C, gas mark 3) and place 12 cupcake cases in a cupcake or muffin tin.

    Place the butter, flour, sugar and baking powder into a large bowl and using a hand held or freestanding electric mixer, slowly mix together until it resembles breadcrumbs.

    For this step you'll need:

    • 40g Butter (unsalted) softened
    • 120g Plain white flour
    • 1tsp Baking powder
    • 140g Unrefined golden caster sugar

    Mix together the eggs, orange & lime juice, and milk in a jug then gradually add to the bowl. After mixing thoroughly, spoon the mixture into the cases until they are about 2/3 full.

    For this step you'll need:

    • 1 Egg(s) (free range) large
    • 1 tbsp Orange juice
    • 1 tbsp Lime juice
    • 75tsp Milk (whole)

    Bake in the oven for 25 minutes or until the cakes are golden brown and a skewer comes out clean.

    To make the frosting, mix together the butter and icing sugar until it resembles breadcrumbs in texture, then add the milk and vodka and mix on a high speed until the frosting is soft and fluffy. Add your chosen food colouring gradually until you reach your desired colour.

    For this step you'll need:

    • 80g Butter (unsalted) softened
    • 250g Icing sugar
    • 2tsp Milk (whole)
    • 2tsp Vodka
    • Food colouring

    Decorate the cupcakes with frosting using either a piping bag or palette knife and finish with a slice of lime.

    For this step you'll need:

    • Lime(s) slices, to decorate
