    Preheat the oven to 180°C (gas mark 4) and line 2 baking sheets with baking parchment.

    Melt the chocolate with the cocoa powder and butter in a heat proof bowl over a pan of simmering water. Stir occasionally until melted and combined, remove from the heat and set aside to cool.

    For this step you'll need:

    • 125g Dark chocolate broken into small pieces
    • 30g Cocoa powder
    • 55g Butter (unsalted)

    Cream together the egg, sugar and orange extract until pale and fluffy then pour in the melted chocolate and mix well.

    For this step you'll need:

    • 1 Egg(s) (free range)
    • 100g Unrefined light muscovado sugar
    • 1½tsp Orange extract

    Sift together the flour, salt and baking powder and add to the chocolate mixture, finally fold in the broken chocolate pieces.

    For this step you'll need:

    • 40g Plain white flour
    • Salt
    • ¼tsp Baking powder
    • 75g Dark chocolate broken into small pieces

    Cover the bowl and chill in the fridge for 30 minutes then scoop out heaped teaspoons of mixture and roll into balls, then roll in some cocoa powder and place them onto the baking sheet leaving some space between to allow the cookies to spread out during baking.

    For this step you'll need:

    • 3 tbsp Cocoa powder

    Bake for 10 minutes until the tops are starting to crack and look glossy. Leave to cool for about 10 minutes then transfer onto a cooling wire to cool completely.
