    To make the praline, line a baking tray with foil and grease lightly with a little vegetable oil.

    Fry the almonds in a dry pan, turning occasionally until lightly golden brown. Place on a plate to cool.

    For this step you'll need:

    • 50g Almonds (flaked)

    Place the caster sugar in the pan and heat gently until it dissolves and turns a pale caramel colour. Shake the pan a couple of times until the sugar turns a deep golden colour.

    For this step you'll need:

    • 100g Unrefined golden caster sugar

    Add the almonds and shake until well coated in the caramel. Tip the mixture onto the baking tray and allow to cool and set When cold, break the praline into chunks.

    Cut the peaches in half and remove the stones. Sprinkle the surface of each cut peach with a little sugar then cook on a hot barbecue for a couple of minutes on each side until charred. Serve with ice cream and the almond praline.
