    In a small pan gently heat the milk and cream until it is steaming.

    For this step you'll need:

    • 600ml Milk (whole)
    • 227ml Double cream

    Whisk together the egg yolks and 50g of the sugar until pale and thick, then pour onto the milk. Wash out the pan and return the mixture to it then cook gently for 6-7 minutes until it lightly coats the back of a spoon. Cool and put in the fridge.

    For this step you'll need:

    • 4 Egg yolk(s) (free range)
    • 50g Unrefined golden granulated sugar

    Preheat the grill to high, mix the breadcrumbs with the remaining sugar and spread it out on a baking tray.

    For this step you'll need:

    • 125g Unrefined golden granulated sugar
    • 75g Breadcrumbs from brown bread

    Put this in the base of the grill and watch, regularly re-spreading the breadcrumbs until it turns dark golden brown. Leave to cool, then break up into large pieces.

    Process the ice cream in an ice cream maker until soft frozen, then place in a plastic container and stir in the crumbs until they are evenly distributed.

    Place in the freezer for 2 hours or until frozen.
