How To Prepare Muskrat
To prepare the muskrat, I soaked it in salt water for about 3-4 days. I then boiled it over the fire in just plain water, seasoned it with my special blend and then fried it in olive oil and topped with butter until browned.
The pumpkin was peeled and boiled in water until soft. I then added maple sugar that I harvested last spring along with some pumpkin spice.
To convert this to pie simply blend until smooth and add 4 eggs. Bake at 425F for 15 minutes and then reduce to 375F for 30 minutes or until the pie does not stick to a knife when inserted.
