Lemon Ganache Love Heart Valentine's Cookies | Cupcake Jemma

Ahh Valentine's Day...not that you should have to wait for a specific day to tell someone how you feel but since it's happening anyway, why not make your special someone these Love Heart Cookies! Snappy lemony cookies sandwiched together with cream, whipped lemon and white chocolate ganache, even if it isn't Valentine's Day, you should get on and make these!

Recipe -
For the cookies...
100g soft unsalted butter
100g caster sugar
1/2 lg egg
zest of 1 lemon
210g plain flour

For the filling...
100g double cream
150g white chocolate, melted
zest of a lemon

To decorate...
sugarpaste in various pastel shades
royal icing in slightly darker shades.
