These jumbo oatmeal carrot muffins have the classic muffin top you would see in a bakery. Very light and not too sweet, these are even better than Tim Horton's muffins.

Recipe:
2 cups all purpose flour
1 1/2 cups plain yogurt
1 cup brown sugar
1/2 cup vegetable oil
2 eggs
1 cup oatmeal
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
1 cup of grated carrots
Directions:
Cream together the yogurt, oil, and sugar in your mixing bowl. Once mixed combine the eggs one at a time to form a smooth mixture.
Add the vanilla and mix to combine.
In a separate bowl mix the flour, oatmeal, salt, cinnamon, nutmeg, baking powder, and baking soda together.
Add the dry ingredients to the wet 1/3rd at a time until combined.
Mix in the grated carrots.
Add batter to the muffin cups. Fill the batter all the way to the top to achieve the “muffin top”.
Bake at 425 degrees for 5 mins, then drop the temperature to 375 and bake for another 25 mins.
