It's Valentine's week so I thought it would be fun to share three different dessert options for low carb living! These sweet treats are sure to satisfy and make you and your sweetheart happy. Today I am sharing this creamy and delicious cannoli fluff dessert. This has the flavor and texture of the delicious filling of a traditional cannoli without the crispy wafer shell. This recipe makes 8 half cup servings and has less than 4 carbs per serving. You can check out all the nutrition facts on the website. Links will be provided below.

This starts with a combination of cream cheese, ricotta cheese and whipped heavy cream. I have flavored this up with vanilla extract and Fiore Di Sicilia which is a combination of vanilla and orange oil. If you don't have this you can use regular orange extract. I will have a link to a shopping list below for items I used in this recipe.

This is all sweetened up with my new favorite recipe sweetener, Swerve confectioners which is a powdered erythritol sweetener. Erythritol is a zero calorie sweetener that does not spike glucose levels and is derived from sugar alcohols. It has actually been around since the 1800s and is super safe and know known health effects exist, it is even great for oral health because it kills bad bacteria that cause plaque and gum disease!

Once this is all mixed up and the whipped cream is folded into the cheese mixture, its time to dish up and top off. I am topping my servings today with a combination of toasted slivered almonds and pistachios as well as sugar free chocolate chips that are sweetened with stevia.

This dessert is truly a delicious treat! It will make you think you are doing something bad but you really aren't! I promise you are going to love this dessert that is perfect for sharing with your sweetheart!
