Bruschetta is an antipasto (starter dish) from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese. A popular dish is Bruschetta with tomatoes; the most popular recipe outside Italy[citation needed] involves basil, fresh tomato, garlic, and onion or mozzarella. Bruschetta is usually served as a snack or appetizer. In some countries, a topping of chopped tomato, olive oil and herbs are marketed under the bruschetta name.

Ingredients :

• Baby tomatoes halved - 15-20
• Baguette
• Extra virgin olive oil - 6 tablespoons
• Garlic,chopped - 10 cloves
• Salt to taste
• Jalapeno - 2
• Black olives - 6-7
• Mozzarella cheese grated - 4 tablespoons
• Basil leaves - a few

Method :

Preheat oven to 200 °C / 400 °F. Heat olive oil in a non-stick pan. Add garlic and sauté on high heat until lightly browned. Add cherry tomatoes, salt and stir. Cover and cook. Cut the baguette diagonally into thick slices. Thinly slice jalapeños and add the tomatoes and cover the pan again. Halve the black olives and add. Mix well and cover and cook till soft. Arrange the bread slices on a baking tray. Drizzle a little olive oil over them. Spread the tomato mixture on one end of the slices and mozzarella cheese on the other end. Place basil leaves over the cheese. Drizzle some more olive oil over the slices. Keep the tray in the preheated oven and bake for 8-10 minutes or till the cheese melts. Serve hot
