Gráinne's Kitchen - Raisin Scones

A delicious raisin scone served with raspberry jam and whipped cream.
2 cups of flour
2 tsp of baking powder
2 tablespoons of sugar
4 oz of butter or margarine
1 cup of raisins
1 egg
1/2 cup of milk
Heat oven to 190/390 degrees
Mix flour, sugar and baking powder in a bowl. Add butter/margarine and work into flour with your fingers. Add raisins, mix. Beat egg and add to milk. Slowly add to dry ingredients blending to make a dough. Do not over wet the dough. Knead lightly and cut into circles. Glaze top of scones with a little milk and egg and sprinkle with sugar. Bake for 15/20 mins, turn after 12 mins to brown evenly. Cool on a wire tray.
