Naan Khatai in our home was always made with Anchor butter, my Grandmother always made Ghee with this for the recipe, and my Mother and now me too!
This lil melt in your mouth, buttery shortbread like texture is taste just too good, one is definitely not enough!

As far as I can remember, I use to love it as a child in especially in my scramble eggs and on toast. I always could spot this yellow and red rectangular block in the fridge.
A slice of this would just change the flavour totally, making everything soo buttery, creamy and smell so good.
1 1/2 cups plain flour.
1 cup caster sugar
1/4 cup cooking oil
2 tblsp ground almonds
2 tblsp semolina
2 tblspbesan flour
1/4 tsp bicarbonate of soda
1/2 tsp baking powder
1/2 tsp Cardomom powder
1/2 cup Anchor butter or ghee made from Anchor butter
How to make Ghee, (Clarified Butter)
In a large saucepan, add 500g Anchor butter.
Leave to melt on low medium heat till butter starts to melt and gently starts to bubble.
Do not stir.
You will notice white foam on the surface which is the milk Proteins.
Let this continue, till the foam, sinks to the bottom.
When butter will start to look clear.
Switch heat off.
When its slightly cool pour carefully in a glass bottle or dish through a strainer making sure the salt residue doesn't mix with the ghee.
