Chocolate Mousse cake Flan | Chocolate mousse recipe | custard cake (no bake cake)
Chiffon ingredients:
1/2 cup all purpose flour
1/4 cup white sugar
1/2 tsp baking powder
1/8 tsp salt
1 tbsp powdered milk
2 egg yolks
1/8 cup vegetable oil
1/8 cup water
1/2 tbsp vanilla extract
Meringue:
2 egg whites
1/4 cup white sugar
1/4 tsp white vinegar
Leche flan ingredients:
2 whole eggs
1/2 cup evaporated milk
190g condensed milk
1/2 tbsp vanilla extract
1/3 tbsp white sugar
Chocolate Mousse:
1 1/2 cups all purpose cream(chilled overnight)
200g condensed milk(chilled overnight)
1/4 cup cocoa powder, unsweetened
10g gelatin, clear and unflavored
1/8 cup hot water(for gelatin)
Whipped cream:
1 cup whip cream powder
1/2 cup cold water
toppings & decoration: (optional)
chocolate shavings
chocolate sprinkles
Caramelized sugar:
1) Melt white sugar into the cake pan
2) Leche flan mixture: Combine whole eggs, evaporated milk, condensed milk and vanilla extract
3) Pour flan mixture into the pan
4) Chiffon: Combine egg yolks, oil, water and vanilla extract
5) In a separate bowl combine all purpose flour, sugar, powdered milk, baking powder and salt
6) Combine dry and wet ingredients
7) Meringue: Beat egg whites until foamy
8) Add white vinegar and beat until soft peak forms
9) Gradually add white sugar and beat until stiff peak forms
10)Gradually fold meringue into the batter
11)Gently pour the cake batter over the flan mixture
12)Steam for 15-30min. over med.low heat
13)Cool completely and remove cake from the pan
14)Flip the pan upside down onto a plate
15)Flip the cake again onto the cake board
16)Put aluminum foil around the cake
17)Chocolate mousse: Combine cocoa powder, hot water and condensed milk
18)Dissolve gelatin in how water
19)Whip cream on high speed until cream is doubled
20)Gradually add cocoa-condensed milk mixture and dissolved gelatin
21)Pour mousse mixture into the cake base
22)Refrigerate overnight until it sets up
23)Whipped cream: Combine whip cream powder and very cold water
24)Whip on high speed until mixture turns into whipped cream
25)Remove aluminum foil
26)Frost the whole cake and decorate
27)Chill until ready to serve
