Tim made us a delicious treacle sponge pudding for dessert, using our new Instant Pot pressure cooker. We filmed it all, for you all to enjoy!

Treacle Sponge Pudding in the Instant Pot

Ingredients:

6 tablespoons (90ml) golden syrup
ΒΌ lemon, juice only
150g softened butter, plus extra to grease
150g soft light brown sugar
150g self-raising flour
2 eggs, beaten
Pinch of salt
Milk

Instructions:

Grease a 900ml pudding basin with butter. Add the golden syrup and lemon juice and mix together in the bottom of the bowl.

Beat the butter and sugar with a pinch of salt until fluffy. Gradually add the beaten eggs and mix. Fold in the flour. Add milk until smooth and drippy.

Spoon mixture on top of syrup. Cover bowl with pleated grease proof paper and foil and tie string around to seal.

Place the bowl into the Instant Pot, on top of the metal trivet. Add water until halfway up bowl.

Steam for 25 minutes, then manual for a further 15. Quick release the pressure and remove from instant pot.
