These pretty Jam Tarts are a delightful treat which can be perfected just in time for Mother's Day. With the option to make both your own jam and own pastry, this recipe is suited to all levels of bakers.

Preparation time: 25 minutes
Cooking time: 20 minutes
Makes: 12 small tarts

Ingredients:
For the tarts:
175g plain flour, plus extra to dust
85g cold salted butter, cut into small pieces
1 tbsp granulated sugar
1 egg yolk, beaten with 2 tbsp cold water
About 150g apricot or berry jam, or a mixture of both (unless making your own jam, ingredients list below)
1 egg white, loosely beaten (optional)

For the homemade jam:
300g pack frozen British summer fruits
300g granulated sugar
3 tbsp lemon juice
