1. Stuffed Cauliflower

You'll need:

- 1 cauliflower
- 1 red onion
- 1 green pepper
- 3 slices cheese
- 3 slices cooked ham
- 2 tbsp butter
- 2 tbsp flour
- 8½ fl oz milk
- salt & pepper
- nutmeg
- 3½ oz grated mozzarella

Here's how:

1. Cook the cauliflower.

2. Cut up the onion and pepper. Roll the cheese slices in individual pieces of ham, then cut the rolls in half.

3. Stick the onion and pepper strips, as well as the cheese and ham rolls, between the cauliflower florets. Divide everything evenly over the whole cauliflower.

4. Melt the butter in a pan and add the flour while whisking. Pour in the milk and season with salt and pepper. Grate in some fresh nutmeg and cook until the sauce thickens.

5. Pour the sauce over the cauliflower and sprinkle with mozzarella. Bake for 20 mins in a convection oven at 340°F.

You'll need:

- 1 cauliflower
- 1 tbsp oil
- 1¼ cups greek yogurt
- 2 cloves garlic, chopped
- 1 tbsp cayenne pepper
- 1 tbsp cumin
- 1 tbsp curry powder
- 2 tsp salt
- 1 tsp pepper
- juice and zest of one lemon

Here's how:

1. Preheat the oven to 400°F and grease a baking sheet with oil.

2. Wash the cauliflower, remove the leaves and stalk.

3. Mix the yogurt and garlic in a bowl, add the lemon juice and zest. Now add the rest of the spices and mix well.

4. Dunk the cauliflower in the mixture, making sure it's completely covered.

5. Place the cauliflower on the greased tray and bake for 40-45 mins.

3. Hearty Cauliflower Muffins

You'll need (for 6):

- 5½ cups cauliflower
- nutmeg
- 1 clove of garlic, chopped
- salt & pepper
- 8 eggs
- 1½ cups grated cheddar
- 4 slices of bacon

Here's how:

1. Grate the cauliflower and season with nutmeg, garlic, salt and pepper. Add two eggs and the cheese, then knead the mixture into a dough.

2. Press the dough into the molds of a muffin pan. Bake at 330°F for 12 minutes.

3. Meanwhile, fry the bacon until crispy and cut it into small cubes.

4. Fill the baked dough molds with bacon and break an egg into each one. Bake the muffins again at 285°F for 6 mins.

4. Cauliflower BBQ Bites

You'll need:

- 1 cauliflower
- 1 cup flour
- 3 eggs, beaten
- 4 cups breadcrumbs

For the sauce:

- 1 cup BBQ sauce
- ½ cup brown sugar
- pepper
- ½ lemon
- 1 garlic clove, chopped

Here's how:

1. Break the cauliflower into small florets. Dunk them in flour, egg, then breadcrumbs. Bake for 20 mins at 355°F.

2. Mix the sugar, pepper, garlic, and a squeeze of lemon into the BBQ sauce and heat it in a pot.

3. Mix the baked cauliflower bites into the warm BBQ sauce and serve with a dip, e.g. ranch dressing.

- butter
- 3 garlic cloves, chopped
- ⅛ cup flour
- 1¾ cups milk

- 7 oz grated cheddar cheese
- 2 cooked cauliflowers
- bacon

- spring onions

Here's how:

1. Melt the butter in a pan, stir in the garlic and flour.

2. Pour the milk in, add the cream cheese. Now add 5 oz grated cheddar cheese and stir again, until it all melts.

3. Place the cooked cauliflower in a casserole dish, pour in the cheese sauce.

4. Add the cooked bacon, salt and pepper and mix together.

5. Sprinkle on the rest of the cheese, with more bacon and chopped spring onions. Bake at 320°F for 40 mins.

6. Cauliflower Salad

You'll need (for 3 portions):

For the salad:

- 1 cauliflower
- salt & pepper
- 3 tbsp olive oil
- 3 hardboiled eggs
- 5 oz celery, cubed
- 1 red onion, diced

For the dressing:

- ¾ cup plain yogurt
- 1 tbsp mustard
- 1 tbsp honey
- 2 tbsp fresh dill, chopped
- 1 garlic clove, chopped
- 3 tbsp olive oil
- juice from half a lemon

Here's how:

1. Cut the cauliflower florets into pieces, discard the stalk. Put the florets on a baking tray, season with salt and pepper and drizzle with oil. Toss to coat evenly, then bake at 390°F for 15 minutes.

2. Slice the eggs and add them to a large bowl with the baked florets, celery and onion.

3. For the dressing: put the ingredients in a bowl and stir until smooth. Pour the dressing over the salad and give it a few turns with a spoon.

You'll need:

- 1 cauliflower
- 2 eggs
- ½ tsp oregano
- 2 garlic cloves, chopped
- salt & pepper
- 14 oz grated mozzarella
- 1 cup grated parmesan
- chopped parsley

Here's how:

1. Grate the cauliflower.

2. Add all the ingredients (using only 3½ oz of the mozzarella) to the grated cauliflower, season with salt and pepper. Mix thoroughly and press the mixture onto a lined baking tray. Bake at 340° F for 25 mins.

3. After baking, sprinkle the rest of the mozzarella on top, with some pepper. Bake again for 10 mins at 340° F.

4. Cut your creation into small portions, garnish with fresh parsley, and serve with a dip.
