NOODLES: FISH NOODLE IN SATAY SAUCE

Today I would like to show you MY SPECIAL NOODLE DISH.
You have seen my video on how to make FISH BALLS in my German Channel. Now I will be showing you how to make a yummy FISH NOODLES DISH. I call it FISH NOODLE IN SATAY SAUCE.

1) Pound
2 stalks scallions
30gm Ginger
and soak them in ice cold water set aside while you prepare the fish paste. After soaking add 1 tsp salt and 1/2 tsp sugar stir to dissolve. Pour through a sieve and extract about 150ml scallion ginger juice and set aside.
2) In a blender add about 425gms of Fish meat (use fish with white meat and with more oily texture, unfortunately I could only get Redsnapper here in Germany).
Add 2 tbsp tapioca starch and 25gms wheat starch and blend the mixture. While blending dribble the 150ml ice cold ginger scallion water into the fish mixture.
Lastly blend in the 100gms lightly beaten eggwhite and about 30-40ml vegetable oil. Continue blending till paste it is abit elastic.
3) Meantime bring a pot of water with salt to a boil. Then reduce the heat and bring water to a low simmering boil.
4) Remove the ready fish paste from the blender container and pour into a bowl to check for any unblended fish pieces and also to make sure the paste is well blended to a elastic paste. Then pour into a plastic bag or a piping bag. Cut the tip of the plastic bag.
(i cut the hole abit too big so my noodle was a bit large.)
5) Now press and pipe the fish paste into a long strand like noodle into the simmering boiling water. Give it a soft stir so that the noodles do not stick to the bottom of the pot. After 1-2 minutes you will see the noodles float to surface of the water.
Scoop into a basin of cold water, and immediately scoop out into a dry bowl.
6) Heat a wok at medium low heat. Add about 1-2 tbsp vegetable oil. Fry
1 clove Garlic minced
1/2 carrot strips
1 scallion cut in strips
1 red chili strips
a pinch of salt
stir fry for 1 minute
and add 1 portion your fresh made FISH NOODLES enough for a person. Toss lightly.
Final touch add 2-3 tbsp SATAY SAUCE more if you like. Adjust taste to your liking.
Toss and serve.
