Kolhapuri Sukka Mutton -Deliciously spicy this mutton curry is another favourite of the Kolhapuris. Sukha mutton is more loved by any age group.

KOLHAPURI SUKHA MUTTON

Ingredients

750 gms mutton, cut into big pieces on the bone
Salt to taste
4 medium onions
5 tbsps oil
4 tbsps grated dried coconut
1 tbsp ginger-garlic paste
1 cup finely chopped tomatoes
¼ tsp turmeric powder
1 tsp red chilli powder
1 tbsp Kolhapuri masala
A pinch of garam masala powder
A pinch of green cardamom powder
Fresh coriander sprig for garnishing

Method

1. Slice half the onions and roughly chop the remaining.
2. Heat a pressure cooker, add mutton, 2 cups water and salt and cook under pressure till 6 whistles are given our or till the mutton is fully cooked. Strain and set aside.
3. Heat 4 tbsps oil in a non-stick pan, add sliced onions and grated coconut and sauté till brown. Cool and grind with ½ cup water till smooth.
4. Heat remaining oil in another non-stick pan, add chopped onions and sauté till brown. Add ginger-garlic paste, tomatoes, turmeric powder, chilli powder, Kolhapuri masala, ground paste and mix well. Add salt and mix well. Cover and cook till the mixture thickens.
5. Add boiled mutton and mix well. Add garam masala powder, green cardamom powder and mix well. Cover and cook on low heat for 5-8 minutes.
6. Serve hot garnished with coriander sprig.
