These Keto Pumpkin Blondies are a great treat to serve at Thanksgiving or for any occasion for those looking for a traditional pumpkin dessert recipe. Very easy to throw together and sure to please the pumpkin lovers.

Ingredients:
Coconut oil for the pan
1 large egg
1/2 cup softened butter
1/2 cup pumpkin puree
1/2 cup erythritol
1/4 cup almond flour
2 tablespoons coconut flour
1 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1 teaspoon maple extract
15 drops liquid stevia
1/3 cup chopped pecans or walnuts

Preparation:

Pre-heat your oven to 350F
Grease baking pan with coconut oil

Use an electric mixer to blend egg, butter, pumpkin puree and erythritol

Combine the flours, pumpkin pie spice, cinnamon, stevia and maple extract

Mix the wet and dry ingredients together

Spread mixture into the baking pan and sprinkle the chopped nuts on top

Bake 20-25 minutes until the edges are slightly brown

Allow to cool and cut into 12 portions
