Chocolate Chickpea Muffins
Hi guys, playing around with different cameras and this one wasn't the best :(. If you have recommendations lets me know!
Anyway, I hope you enjoy this quick video on my chocolate chickpea muffins. They are so healthy, all the ingredients used have a number of health benefits. You can change up the sweetener if you want, in the past I have used munkfruit sweetenerr or 1/4 cup maple syrup and 1/4 coconut nectar. Be creative! Let me know what kind of video you want next :)
Recipe
1 19 oz can chickpeas
1/2 cup sweetener (honey, coconut nectar, coconut sugar, maple syrup, lakanto)
3 Tbsp Cacao Powder
3 Eggs
1 Tsp Vanilla
1/4 Tsp Baking Soda
1 Tsp Baking Powder
1-2 Tbsp nut or seed butter (optional)
Chocolate chips (to taste)
Directions:
1. Preheat oven to 350F and line or grease a muffin pan.
2. Place all ingredients in a high powered blender and blend until smooth consistency.
3. If adding nuts or chocolate chips to the batter do so at this point.
4. Distribute evenly in muffin tins
5. Place chocolate chips onto of the batter.
6. Bake for 20 minutes.
7. Let cool completely before taking out of muffin tins!
