Place the water and sugar in a pan and simmer gently until the sugar has dissolved. Bring to the boil then turn off the heat immediately.

For this step you'll need:
- 100ml Water cold
- 50g White caster sugar

Allow to cool then add rose water to taste and store in the fridge until required.

For this step you'll need:
- 2tsp Rose water

Mix 40ml of the syrup with 40 ml orange liqueur and 80ml gin. Pour into 4 chilled glasses and top up with sparkling rose wine. Add rose petals to garnish

For this step you'll need:
- 40ml Orange liqueur
- 80ml Gin
- 40ml Rose sparkling wine
