    Spoon a tablespoon of berries into the bottom of 6 glasses and refrigerate.

    For this step you'll need:

    • 400g Berries (fresh) mixed

    Place the gelatine leaves into a bowl and cover with cold water and leave to soak for 10 minutes. Pour the cordial into a bowl. Drain the gelatine and add to the cordial.

    For this step you'll need:

    • 4 Gelatine leaves
    • 150ml Elderflower cordial

    Sit the bowl over a pan of simmering water and heat until the gelatine is dissolved completely and the mix is syrupy.

    Add the sugar and stir until dissolved, then remove the bowl from the heat and let it cool for a few minutes.

    For this step you'll need:

    • 2 tbsp White caster sugar

    Pour the prosecco or sparkling grape juice into your cordial mix, and then pour into the chilled glasses. Chill in the fridge until set.

    • 425ml Prosecco or sparkling grape juice
