    Heat the oven to 170°C (fan 150°C, gas mark 3). Place paper cases in a 12 hole cupcake tin.

    Put all of the cupcake ingredients into a mixing bowl and whisk with an electric whisk until well combined. Alternatively beat well with a wooden spoon.

    For this step you'll need:

    • 2 Egg(s) (free range) whole
    • 110g Self-raising white flour
    • ½tsp Baking powder
    • 110g Butter (unsalted)
    • 110g Unrefined golden caster sugar
    • 1tsp Vanilla extract

    Spoon the mixture into the paper cases and bake for 20-25 minutes until golden and springy to the touch. Remove from the tin and place on a wire rack to cool.

    Sift the icing sugar into a bowl and gradually stir in the lemon juice and water until smooth and thick. Add a few drops of yellow food colouring. Spread the frosting over the cakes.

    For this step you'll need:

    • 250g Icing sugar
    • 3½ tbsp Lemon juice
    • 1tsp Water hot

    Beat the butter in a large bowl until soft. Sift in the icing sugar and beat well. Stir in the vanilla extract. Divide between 3 small bowls, leaving one quarter of the buttercream in the large bowl

    For this step you'll need:

    • 110g Butter (unsalted)
    • 225g Icing sugar
    • ½tsp Vanilla extract

    Sift the cocoa into one bowl and beat well. Add a drop of pink food colouring to another bowl and beat well. Add a drop of yellow food colouring to the third bowl. Spoon the buttercreams into 4 small piping bags and pipe ‘hair’ onto the cakes.

    For this step you'll need:

    • ½ tbsp Cocoa powder
    • Pink food colouring
    • Yellow food colouring

    Decorate the cakes as desired. Our recommendation is liquorice for the ‘eyes’,  jelly beans for the ‘noses’ and chocolate buttons for the ‘ears’.
