    Preheat the oven to 200°C (fan 180°C, gas mark 6) and lightly grease an 8” pie dish with butter.

    Sieve the flour and salt into a bowl and rub in the butter until it resembles fine breadcrumbs.

    For this step you'll need:

    • 225g Plain white flour
    • Salt
    • 140g Butter (unsalted) cold, cut into cubes

    Add the cold water and use a knife to mix together, then use your hands to bring it together. Divide into 2 halves.

    For this step you'll need:

    • 6tsp Water cold

    Roll out one half into a disc large enough to line the pie dish then place into the dish lightly pressing into the corners.

    Place the apple in a bowl and add the cinnamon and caster sugar stirring to coat the apple chunks, place this into the pie dish.

    For this step you'll need:

    • 4 Bramley apple(s) large, peeled, cored and cut into chunks
    • 1tsp Cinnamon
    • 1 tbsp Unrefined golden caster sugar Plus extra for sprinkling

    Roll out the remaining half of pastry into a disc large enough to cover the pie dish. Moisten the edges with some water then lay the lid on top, lightly press the edges to join the base and lid, then trim any excess with a sharp knife. Pinch the edges of the pie all the way around.

    Lightly brush the surface with a little milk then sprinkle over some golden caster sugar. Place in the oven to bake for 20-30 minutes, then bring out to serve.
