    Cut a small cross in the bottom of the tomatoes and place in a bowl of boiling water. Leave for 7-9 minutes. Drain and then plunge into cold water. Peel the skins off the tomatoes. Cut into cubes and place in a mixing bowl with the garlic, peppers and cucumber.

    For this step you'll need:

    • 1kg Tomato(es) fresh
    • 2 Garlic clove(s)
    • 1 Red pepper diced
    • ½ Cucumber de-seeded and diced

    Add the bread, mint, vinegar, sugar and olive oil. Cover and chill for about 1 hour or preferably over night. Taste and adjust the taste with sugar. Serve with pitta bread.

    For this step you'll need:

    • 2 White bread slices cut into squares
    • 2 tbsp Mint leaves chopped
    • 125g Red wine vinegar
    • 3tsp Half Spoon granulated sugar
    • 125ml Olive oil
