    Put the onions and half the vinegar into a large pan and bring to the boil. Simmer gently for 10 minutes.

    For this step you'll need:

    • 450g Onion(s) finely chopped
    • 150ml Vinegar malt

    Cut the apples into small pieces and add to the pan with the remaining vinegar, cardamom, sugar, apricots and a sprinkling of salt and pepper. Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, stirring occasionally until the mixture is very thick.

    For this step you'll need:

    • 900g Apple(s) cooking, peeled and cored
    • 150ml Vinegar malt
    • 2tsp Cardamom pods crushed
    • 350g Unrefined light muscovado sugar
    • 110g Dried apricots roughly chopped
    • Salt
    • Pepper

    Spoon into hot sterilised jars, seal and label. Leave to mature in a cool dark cupboard for up to 3 months.
