In this episode of Retronomy chef Jonny Marsh shows you how to make that classic Great British dessert: strawberry and sherry trifle. He even shows you how to make homemade custard!

Ingredients:

1 packet of Strawberry Jelly
8 Sponge fingers
1 punnet of strawberries
250ml whole milk,
1 vanilla pod
82g sugar
3 egg yolks
300ml whipping cream
1 tbsp sherry
Chocolate to grate for serving

Step 1: Make The Fruit Jelly

Put some cut up strawberries into the bottom of a jar and pour over jelly cubes dissolved in water. Leave this to set in the fridge.

Step 2: Make The Custard

Bring the milk up to the boil with the vanilla pod. Whisk the egg yolks and 32g of the sugar until it is light and fluffy. Pour the hot milk into the egg mixture, return to the pan and cook it on a low heat until it thickens. Once thick, cool it down by pouring it into a bowl set in another bowl of iced water.

Step 3: Assemble the Trifle

Remove the vanilla pod from the custard, then layer some onto the strawberries and jelly.
Whisk the cream with 50g of sugar and a dash of sherry until you have stiff peaks, then pipe or spoon over the custard. Grate over some chocolate and break in some sponge fingers to serve.
