How to Make Red Grapefruit Marmalade

Red grapefruits are available all year round (unlike Seville oranges) and make a delicious fruity marmalade. Adding crystallised ginger gives an extra tang and enhances the flavour of the fruit. To calculate the weight of the sugar, multiply the weight of the grapefruits by one and a half, so 2 pounds of grapefruit need 3 pounds of sugar. There is no need to measure the amount of water - just make sure that there is just enough water to cover the chopped fruit when you leave it to soak overnight.
