This waakye/tuo zaafi stew is very special! I used healthy techniques in achieving those depths of flavors you want in your waakye/ tuo zaafi stew! It’s delicious served with rice, or waakye as well as the tuo zaafi. I’ll be up loading the tuo zaafi and ayoyo soup video in a few days! Enjoy!!!
Ingredients:
* Meat of choice ( 1 pound each bone in and boneless beef, 1 pound lamb, 1 pound cow foot)
* meat marinade - 1 onion, 1 habanero chili, 2 Serrano chilis, 3 spring onions/ scallions, small piece of ginger, 3 cloves of garlic, 1/2 teaspoon of aniseed. Salt and black pepper for seasoning.
For caramelized onions and bell pepper purée - 1 red onion, 1/2 green bell pepper sliced thinly, 1 tablespoon of virgin coconut oil, salt and pepper to season.
For waakye stew preparation - 2 cups virgin coconut oil, blended mixture of ( 10 petit bell chilis, 2 Serrano chilis,3 scallions, 1 red onion, small piece of ginger, 1 habanero chili, 1/2 tablespoon of dawadawa or locust been, 1/2 tablespoon black pepper corns, 1/2 teaspoon of aniseed.)
* 1 cup tomato paste
* 1 tablespoon of dry rosemary
* 1/2 tablespoon of dry oregano
* 1/2 tablespoon of dry thyme
* 1 tablespoon of turmeric
* 1 tablespoon of smoked paprika
* 1/2 teaspoon of cumin
3 tablespoons of smoked shrimp powder
4 cups of homemade tomato sauce
3 bay leaves
Garnish with 1/2 green bell peppers scliced, half red onion sliced, and petit bell chilis
