Baked Tilapia Fish from Maimoona Yasmeen's Recipes

Ingredients:

Whole Tilapia Fish (big) - 1 to 2
Turmeric Powder/Haldi Powder - 1 1/2 tsp
Salt - 1 1/2 tsp + 1 1/2 tsp + 1/4th tsp
Chickpea Flour/Besan - for washing the fish
Tamarind/Pakki Imli - 2 tbsp
Chopped Coriander/Hara Dhaniya - 2 tbsp
Chopped Mint Leaves/Pudina - 2 tbsp
Crushed Garlic/Lehsan- 2 tsp
Red Chilli Powder/Lal Mirch Powder - 2 tsp
Tandoori Masala Powder - 1 1/2 tbsp
Coriander Powder/Dhaniya Powder - 1 tsp
Spices/Garam Masala Powder - 1 tsp
Red Food Colour - few pinches (optional)
Corn Flour - 3 tbsp


Procedure:

1. Wash, clean the scales and stomach of tilapia fish, remove the fins but removal of caudal fin or its tail is optional.
2. Mark deep cuts on both sides.
3. Now rub 1 1/2 tsp turmeric powder and 1 1/2 tsp salt all over and on both sides of the fish, rub inside the stomach as well.
4. Leave this for about half an hour. This is done to remove its smell.
5. Soak washed tamarind in 1/4th cup water for about 15-20 min.
6. After half an hour of leaving, wash the fish using chickpea flour thoroughly.
7. Leave the fish on the strainer for about half an hour.
8. Meanwhile roughly grind together washed and strained chopped coriander, mint leaves, whole green chillies and 1/4th tsp salt.
9. Squeeze and collect a very thick consistency tamarind water, do not add any more water while squeezing.
10. Add the ground paste to this tamarind water.
11. Add crushed garlic, 1 1/2 tsp salt, red chilli powder, tandoori masla powder, coriander powder, spices or garam masala powder, red food colur and corn flour. Keep this paste aside for marinating the fish.
12. Cornflour will prevent the paste from getting watery.
13. Mix thoroughly.
14. When the excess water is strained from the fish, apply the paste all over the fish, in between the cuts as well as inside the stomach.
15. Apply the paste the other side of the fish as well.
16. Leave this for marination for about one hour.
17. After one hour of marinating the fish, brush oil all over the baking tray.
18. Place the marinated fish in this tray.
19. Apply the paste again, use the remaining paste for another fish.
20. Brush oil all over the fish.
21. Pre-heat the oven at 200 degrees celsius for 20-25 min.
22. Bake or grill the fish at 200 degrees celsius for 25-30 min.
23. Place this baked fish in a tray decorated with the salad of your choice.
