Slow cooker salisbury steak is on the menu tonight! Making enough to freezer bank for another meal and that makes me happy! These are delicious, little mini meatloaves simmered in a mushroom and onion gravy that are super tender and delicious. I don't know why I didn't make them this way all along! I am never going back to the other way again!

Even though summer is here, we are still using our slow cookers! They are super important all year round to getting our families fed and happy. I love using the slow cooker, especially in the summer because you can use it on your deck, in your carport or on your patio, leaving the heat outside. If you have a screened porch, even better!

Up until a few weeks ago, I had never made salisbury steaks in my slow cooker. I was planning a Sunday dinner where I knew the day was going to be very busy. Church, a baby shower in the afternoon and that night was our weekly dinner with my father. I usually make and take to his house and we all enjoy the meal together. I also make sure to make extra large batches of whatever I am cooking on those nights so that we can make up freezer meals in individual portions for him to enjoy the rest of the week should he not feel like cooking.

I have basically made my traditional salisbury steak but tossed it all in the slow cooker to simmer for a few hours. This renders a beautiful and deliciously tender mini meatloaf with a savory brown mushroom and onion gravy that is super satisfying. I don't make meatloaf often but salisbury steak is one of our family favorites. These mini meatloaves are just what the doctor ordered to keep the family happy!

I started out with the intention of making some to freezer bank. This recipe rendered 9 salisbury steaks. This gave us two full meals for four and one steak ended up being a tester for the family pre-dinner. You know how that goes right?

I started with around 3 pounds of a beef and pork ground meat blend. Added both fresh and dry bread crumbs, eggs, milk and seasonings. I used my homemade onion soup mix but you can use the envelope type, just add some dried marjoram, basil and parsley to the mix. I also seasoned this up with my Hungarian style steak seasoning but you can use your favorite blend for seasoning meats.

Mix all this up like you would for meatloaf and then form into oval shaped patties. I like to grab a handful and form the "steaks" into ovals that are about the size of my hand both length and width. Set aside on a plate until you have all of them made. You can also choose to divide evenly by weighing the meat out with a kitchen scale if you have a specific number you need.

Once all the steaks are formed its time to brown them up. This is an important step and you should not skip it. I know there may seem to be a lot of steps for this meal but trust me they are worth it! Just brown the salisbury steaks on both sides then place in the vessel of your slow cooker.

If your meat has rendered enough fat, toss in the mushrooms and onions and give everything a good toss. Cook until they are wilted. No need to caramelize. If you don't have enough fat, add a pat of butter to the pan or a splash of vegetable oil to get things going. When the mushrooms and onions are ready, add them and their liquid to the slow cooker on top of the prepared steaks.

Now it's time to make the gravy.I am using boxed beef bone broth. You can use wondra flour to thicken and season to taste or you can use four packets of your favorite brown gravy mix along with the bone broth for a great, quick and easy option. Mix this all together over the heat and stir often until it bubbles and thickens. Then add on top of everything in the slow cooker.

Now you just need to pop the lid on and wait. Its that easy. I cooked mine for about three hours on high and served with mashed potatoes and a vegetable. The leftovers went right into the freezer for another day. Making ahead makes meals later, super easy.
