Homemade Almond Coconut Granola Bars
These granola bars are packed with good-for-you ingredients like oats, flax seeds, almonds, and coconut oil, helping you stick to your New Year's resolutions to eat more healthfully. Bonus: they're also delicious! A perfect on-the-go breakfast or snack.

Almond Coconut Granola Bars
3-½ cups old fashioned rolled oats
3 tablespoons flax seeds
3 tablespoon chia seeds
2 teaspoons kosher salt
1/3 cup coconut oil
3/4 cup whole raw almonds, roughly chopped
6 medjool dates, roughly chopped (about 1/2 cup)
1/3 cup finely shredded coconut (unsweetened)
1/2 teaspoon ground cinnamon
3/4 cup agave nectar
1 tablespoon vanilla extract
Preheat the oven to 375 degrees Fahrenheit. Line a 9 x 13 in. pan with parchment paper leaving an overhang at the sides.
Dump the oats, flax seeds, chia seeds and salt into a bowl. Top with dots of coconut oil. Toast in the oven for 30 minutes, stirring every ten minutes, or until oats are evenly golden brown. Reduce the oven temperature to 300 degrees F.
Transfer to a large mixing bowl and add the almonds, dates, and cinnamon and stir to combine well. Stir the vanilla extract into the agave nectar and add to the bowl, stirring until the oat mixture is completely moistened. Dump back into the parchment lined pan and press the mixture firmly into the pan. Bake for 35-40 minutes, or until very golden. Cool completely. Remove the bars from the pan to cut. If you prefer a chewier granola bar, heat for 10-20 seconds in the microwave just prior to eating.
Makes 24 bars.
