TriciaTxLady Flan Recipe:
Ingredients..
14 oz can sweetened condensed milk
12 oz can evaporated milk
1/2 cup sugar
2 whole eggs
1 egg yolk
zest of 1/2 lime
1/2 tsp vanilla extract
pinch of salt
boiling water
You will need a small loaf pan or bowl (oven safe) and a larger pan (oven safe) to fit smaller one into with room around for water.
Preheat oven to 350 degrees farenheit. In a small sauce pan add the sugar and on low to med heat you will constant stir the sugar, breaking any lumps, till it becomes a syrup. This will take about 5 minutes. Pour into small baking pan or bowl and set aside. The syprup will harden..it's okay. In a seperate bowl add 2 whole eggs and the extra yolk and whisk. Add salt.. whisk.. add lime zest..whisk.. add vanilla.. whisk.. then add the two milks and whisk for about 2 minutes so the condensed milk is well blended in. Pour this over the syrup in your small bake pan. Boil about 6 cups water or as needed to fill the large pan so the water comes up halfway up the smaller bowl with syrup and flan mixture. Place in oven and allow to bake for 40 to 45 minutes. Allow it to become a bit golden on top. Remove carefully from oven then remove small pan from the large one and out of water. Set to cool then refrigerate for 2 to 4 hours. I did not have to refrigerate tho.. i let it cool on counter for 1 hour till it became firm like a jelly. I used my finger to test and i had a slight bounce to it. Using a butter knife score around the edges to loosen flan then invert to your serving plate. You may opt to leave in small pan and not invert it but serve directly from the pan. If you did invert..use a serving knife to slice out your servings. This amount made a nice flan to serve 1 inch thick slices to maybe 8 people but keep in mind, it is delicious so maybe best for 4 servings. Double up your recipe or make 2 separate ones if you plan to share for a dinner or party. ENJOY!
