Fish Masala recipe--- kerala style
Ingredients:
Fish
Ginger
Garlic
Whole black pepper
Kashmiri dry red chillies
Turmeric powder
Salt
For gravy
Ginger garlic paste
Onion ( Finely chopped)
Curry leaves
Turmeric powder
Coriander powder
Kashmiri red chilly powder
Garam masala
Tomato (Chopped)
Thick coconut milk
Kasoori methi (Optional)
Salt
Coconut oil
Steps:
Make a paste out of ginger, garlic, whole black pepper and Kashmiri dry red chillies.
Marinate fish with salt, turmeric powder and the ground paste.
Let it rest for an hour.
Shallow fry the fish until 75% done.
Heat oil in a pan.
Add ginger garlic paste and roast till the raw smell goes away.
Add onion and curry leaves and saute till the onion turns soft.
Lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add garam masala.
Add tomato and salt.
Cover and cook on low flame till tomatoes are done.
Add coconut milk and salt and increase the flame.
Add kasoori methi.
Cover and bring it to boil.
Add the fried fish.
Cover and cook for 5 minutes.
Switch off.
Enjoy the fish masala with appam or hot rice.
