How to make Low Carb Chile Verde Cream Quiches

OK this is one of those cases where I can’t find all of the specified ingredients where I live, so rather than Salsa Verde, I’ve had to use a tomato salsa. Rather than canned green chilies, I’ve had to use roasted red peppers (capsicum). But these Chile Verde Cream Quiches quiches from beautyandthefoodie.com are crust free, grain free, low carb, and with a few tweaks can be primal or paleo. These are almost carb free (0.5 net carbs per mini quiche). They’re easy to make and delicious, even with my substitutions. The sour cream I had was really thick, so i wasn’t able to spoon it over the top of the quiches evenly, it was more of a blob in the middle - but that was such a delicious blob to bite into, so it didn’t matter. Hubby asked me to put these on the favourites list, so they’re popular with the non-low careers as well. :)
Ingredients
• 6 eggs, beaten
• ½ cup organic egg whites
• ⅓ cup Salsa Verde
• 2 tbsp organic heavy cream, or unsweetened almond milk
• 3 tbsp mild green chilies, chopped
• 4 sausages, cooked and chopped
• ½ tsp sea salt
• ⅓ tsp black pepper
Topping:
• 2 tbsp organic sour cream
• 2 tbsp Salsa Verde
Optional garnish:
• 1 to 2 mini peppers, sliced
• ¼ cup grated cheese * optional
Instructions
1. Preheat oven to 400°F/204°C and grease or oil a medium size 12 count muffin pan.
2. In a large mixing bowl combine: eggs, egg whites, salsa verde, heavy cream or almond milk, green chilies, cooked chopped sausages, sea salt and black pepper. Stir together thoroughly.
3. Pour egg mixture into each muffin cup.
4. In a medium size mixing bowl combine: sour cream and salsa verde. Stir together well.
5. Once topping is mixed, place a spoonful of topping on each quiche.
6. Can garnish with an optional, small mini pepper slice and grated cheese, if desired.
7. Bake for 30 minutes or until centre is done.
8. Remove from oven, cool and enjoy.
