We had a great big Box of Eggplants to use and I decided to create a low carb version of a Pizza using Aubergine as the base. Its very simple, grain and gluten free, extra tasty and quite colourful on the plate as well. We hope you enjoy our version of a Low Carb Pizza.
INGREDIENTS:
1 eggplant
3t salt
30g oil
75g tomato paste
100g cherry tomatoes
1t Italian seasoning
pepper to taste
50g pizza cheese (mixture of Tasty, Parmesan and Mozzarella) or cheese of your choice
NOTE:
You can make this a vegan recipe by using vegan cheese.
