EASY RICE COOKER CAKE RECIPES: Chocolate Japanese Sponge Cake

Here's my second attempt at this Japanese sponge cake! My first one was the Japanese Cheesecake and that was not as high or fluffy as it should have been. But this one! Well, you have to watch it to find out!

EASY RICE COOKER CAKE RECIPES: Chocolate Japanese Sponge Cake

INGREDIENTS:
5 large or 6 small EGG YOLK & EGG WHITE
1 whole EGG
3/4 cup or 90 grams FLOUR
1 tbsp or 7.38 grams COCOA POWDER
1/4 cup or 50 mL MILK
1/4 cup or 60 grams BUTTER
1/2 cup or 80 grams CHOCOLATE CHIPS
1/4 tsp or 1.42 grams SALT
1/2 cup or 100 grams FINE SUGAR

HOW TO:
1. Separate 5 large or 6 small egg white and egg yolk
2. Shift flour and cocoa powder into a bowl
3. Add chocolate chips, butter and milk in rice cooker, power on and close lid for 1 1/2 minute. Then open and mix with hand whisk until melted
4. Add flour mixture to chocolate batter and mix well
5. Add egg yolk and 1 whole egg into batter and mix well
6. Use electric mixer and mix egg white for 1 minute then add salt. Mix for 2 minutes then add some sugar. Mix for 2 more minutes then add more sugar, then repeat until sugar is all gone. Mixing until the peak stands. This could be between 6-10 minutes.
7. Add about 2 cups of egg white to the batter at a time and SLOWLY mix to incorporate it. Mix about 10 turns then stop. DO NOT over mix or cake will not rise as high.
8. Scrape sides and bottoms with spatula to ensure the batter is mixed with the egg whites
9. COOK for 3 cycles
10. Cool for 30 minutes and ENJOY!

BONUS:
If baking this cake in an oven, here are specific instructions to follow for a perfect high cake. High heat for extended period will deflate your cake. Baking time may vary due to various ovens. Honestly, rice cooker is so much easier! :)
1. Fill large baking pan or cookie sheet with about 2 inches or 5 cm of water
2. Put a rack or tray in the water to hold up the cake pan with the batter (like steaming your cake in the oven)
3. Bake for 20 minutes at 250 degree F or 120 degree C (DO NOT OPEN OVEN DOOR)
4. Increase temperature to 300 degree F or 150 degree C and bake for 15 minutes
5. Open Oven door for 10 seconds then close oven door
6. Decrease temperature to 200 degree F or 100 degree C and bake for 40 minutes
7. After 40 minutes, check cake for to see if done.
8. If cake is done, turn off oven, close oven door and let cake sit in oven for 10 more minutes
9. Remove cake from oven and let it cool for 30 minutes before handling cake
