Whipped Shortbread Cookies

Easy cooking for busy family's
A light, melt in your mouth, delicious cookie. Great for the holidays!
The recipe is below:


1 cup room temperature butter (do NOT substitute)
1/2 cup confectioners sugar (sifted)
Add the above ingredients to a mixer and mix until light and fluffy...about 3 or 4 minutes. Add 1 teaspoon vanilla or almond extract and mix in well.
Sift together 1-1/2 cups all purpose flour, 1/4 cup corn starch and 1/4 teaspoon salt. Add this sifted mixture to the butter, sugar and extract ...beat together about 2 minutes. If mixture is too sticky to handle, put in the fridge for about 30 minutes. Preheat oven to 300 F. Place parchment paper in your baking tray. Roll mixture in walnut sized balls and place 2 inches apart on the baking sheet. Slide a fork across the middle of each cookie...decorate with sprinkles, nuts, cherries or whatever you choose. Bake @ 300 for 14 to 16 minutes. Let them cool on the cookie sheet before removing. When they've cooled, store in an air tight container. Enjoy!!!
