Pasteis de Nata | Portuguese Custard Tarts
Gorgeous buttery tarts with a vanilla custard filling and a cinnamon touch, pasteis de nata are a Portuguese dessert you have to have
For this recipe I decided to make the dough for the tart crust from scratch, this is practically puff pastry so feel free to use puff pastry if you are running short on time but just make sure it is made with real butter ;)
The custard filling is an egg yolk base flavoured with cinnamon and vanilla

Im using a muffin tin to bake these because my moulds did not arrive in time but I suggest you use something aluminium based like:
Recipe makes 8-10 tarts
Custard filling
20g all-purpose flour
1/4 ts cinnamon
A pinch of salt
25ml whole milk
3 egg yolks
125ml milk
1/2 cinnamon stick
1/2 vanilla bean
85ml water
120g sugar
(Optional )1/2 ts vanilla extract
Dough (homemade puff pastry)
300g all-purpose flour
1/4 tsp salt
210ml water
180g very soft unsalted butter
Bake at your highest temperature setting
270-290 C for 9-10min until the crust looks brown and the tops look slightly burned
