    Grease a waffle iron and heat it according to the manufacturer’s instructions.

    Sift the flour and baking powder into a mixing bowl and stir in the sugar and cinnamon. Make a well in the centre.

    For this step you'll need:

    • 75g Plain white flour
    • 2tsp Baking powder
    • 50g Unrefined golden caster sugar
    • 1tsp Cinnamon

    Gradually stir in the egg yolks with the milk, a little at a time, until the mixture is smooth. Stir in the melted butter. Whisk the egg whites until stiff and fold into the batter until incorporated.

    For this step you'll need:

    • 2 Egg(s) (free range) separated
    • 300ml Milk (whole)
    • 25g Butter (unsalted) melted

    Pour some batter onto the waffle iron and cook until golden brown on both sides.

    Sift a little icing sugar over the waffles to serve.

    For this step you'll need:

    • Icing sugar to dust
