For the cupcakes
- 200 g Butter (unsalted)
- 3 Egg(s) (free range)
- 200 g Unrefined golden caster sugar
- 1 tsp Vanilla extract
- 200 g Plain white flour
- ½ tsp Baking powder
- 100 g Cappuccino chocolate chips
For the topping
- 500 g Mascarpone cheese
- 250 g Unrefined golden icing sugar
- 2 tbsp Marsala
- Cocoa powder to dust

Preheat the oven to 180°C (gas mark 4) and line a muffin tin with cupcake cases.

Beat the butter, sugar, eggs and vanilla extract until smooth.
For this step you'll need:
- 200g Butter (unsalted)
- 200g Unrefined golden caster sugar
- 3 Egg(s) (free range)
- 1tsp Vanilla extract

Sieve the flour and baking powder into the mixture and fold in.
For this step you'll need:
- 200g Plain white flour
- ½tsp Baking powder

Fold in the chocolate chips until evenly distributed.
For this step you'll need:
- 100g Cappuccino chocolate chips

Divide the mixture between the cases, then bake in the oven for 15 minutes or until the skewer comes out clean. Leave to cool on a wire rack.

To make the topping whisk the mascarpone and icing sugar then add the marsala. Spread this onto the cupcakes using a palette knife. Dust with the cocoa powder.
For this step you'll need:
- 500g Mascarpone cheese
- 250g Unrefined golden icing sugar
- 2 tbsp Marsala
- Cocoa powder to dust
