    Put the sugar and water into a large saucepan with the lemon zest, bring to the boil and stir until the sugar dissolves, simmer for 1 minute.

    For this step you'll need:

    • 500ml Warm water
    • 250g Unrefined golden caster sugar
    • 5 Lemon(s) Zest only

    Remove from the heat, cool then stir in the lemon juice.

    For this step you'll need:

    • 600ml Lemon juice

    Pour into a shallow plastic container and chill in the fridge for about 4 hours or overnight.

    Place in the freezer, stirring every hour until frozen, this should take about 4 hours. The consistency should be a little granular.
