    Melt chocolate in a bowl over (but not touching) a pan of gently simmering water (or melt in a microwave) then set aside to cool slightly.

    For this step you'll need:

    • 100g Dark chocolate chips

    Whisk together the egg yolks with the chocolate extract, brandy or Cointreau before beating in the chocolate.

    • 1tsp Chocolate extract
    • 1 tbsp Brandy or Cointreau

    In a clean bowl, whisk the egg whites until soft peaks form, then fold through the chocolate mixture until evenly combined. Spoon into individual glasses, ramekins or cappuccino cups and chill for at least 1 hour.

    To decorate; lightly whip the cream until it just holds its shape, spoon a little onto each dessert and sprinkle with the chocolate decorations.
