    Soak the fruit and sugar in tea and leave overnight.

    For this step you'll need:

    • 450g Dried mixed fruits
    • 250g Unrefined light muscovado sugar
    • 300ml Tea warm, black

    The next day, preheat the oven to 170°C (fan 150°C, gas mark 3). Grease and line a 900g/2lb loaf tin.

    Mix the remainder of the ingredients into the fruit, sugar and tea mixture. Beat well.

    For this step you'll need:

    • 450g Self-raising white flour
    • 1 Egg(s) (free range)
    • 2tsp Mixed spice

    Spoon the mixture into the tin and bake for 90 minutes, or until an inserted skewer comes out clean. Serve cold or warm with butter.
