Betty's Deep-Fried Fish Nuggets

Betty demonstrates how to make Deep-Fried Fish Nuggets. These fresh fish nuggets are coated with a batter and then deep-fried in 1 inch of oil, resulting in deep-fried fish similar to that served in a restaurant.

Deep-Fried Fish Nuggets

1 pound fresh fish nuggets (You may use any type of fish that you like.)
¾ cup all-purpose flour
2 tablespoons cornstarch
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
¾ cup water
1 inch of peanut oil in a heavy pot

In a small bowl, mix flour, cornstarch, baking soda, baking powder, salt, and water until smooth. Heat oil in pot to 375 degrees (F). Place about 4 fish nuggets at a time into batter, coating them completely. Use tongs to place them, one at a time, into hot oil. Fry, keeping temperature fairly constant, until nuggets are crisp and browned all over. Use a skimmer to remove the fried nuggets, and place them on paper toweling to drain, along with the crumbs that are created during the frying process. Repeat with remaining uncooked nuggets. When all nuggets are fried and drained, place them on a nice serving plate. These Deep-Fried Fish Nuggets are great with Chipotle Mayonnaise and Apple Cabbage Coleslaw.
