How to Make Banana Split Cupcakes from Cookies Cupcakes and Cardio

Banana cupcakes ingredients & equipment:

• 3 cups all purpose flour
• 1 1/2 teaspoons baking soda
• 3/4 teaspoon baking powder
• 3/4 teaspoon salt
• 1 teaspoon cinnamon
• 2 cups mashed ripe bananas
• 3/4 cup buttermilk (tutorial here )
• 1/2 teaspoon vanilla extract
• 3/4 cup butter
• 1 1/2 cups brown sugar
• 3 eggs

Procedure:
Preheat oven to 350F/170C. Combine flour, baking soda, baking powder, salt and cinnamon in a bowl and combine. Set aside. In another bowl combine the buttermilk, bananas, and vanilla extract. Mix and set aside. In the bowl of a stand mixer, mix the butter and brown sugar until light and fluffy. Add the eggs one at a time. Add half of the flour mixture to the butter mixture and stir on low speed. Add half of the banana mixture. Mix. Add remaining flour mixture and banana mixtures. Mix until everything is incorporated. Line a cupcake pan with cupcake liners and fill wells 2/3 full with batter (4-6 tablespoons). Bake for 20 minutes or until a toothpick inserted into the centre comes out clean. Allow to cool completely.

Banana Split Ingredients:
• chocolate ganache
• vanilla buttercream
• crushed pineapple
• strawberries
• maraschino cherries
• sprinkles
• paper baking trays
• fresh bananas

Banana Split Procedure:
Arrange three banana cupcakes into a paper baking tray. Using a Wilton tip 1A pipe a swirl on top of each of the cupcakes. Drizzle some chocolate ganache on the top of each, add a few sprinkles, and a maraschino cherry to each cupcake. In between two cupcakes, add the strawberries, and in between the other two cupcakes, add the pineapple. Finish off with bananas lining the baking tray on either side of the cupcakes.
