Cookie Dough Cheesecake Recipe | Cupcake Jemma

Is there anything better than sneaking a bit of the cookie dough in to your gob before you've baked them? If, like me, raw cookie dough is one of your favourite things ever then this cheesecake is going to be your new best friend.

Recipe -
BBB...
100g digestive biscuit crumbs
50g unsalted butter, melted
50g demerara sugar

Cookie Dough...
50g unsalted butter, soft
50g light soft brown sugar
50g caster sugar
3tbsp Greek yoghurt
1/2 vanilla extract
140g plain flour
75g dark choc chips

The Cheesecakey bit...
200ml double cream, lightly whipped
500g cream cheese
100g icing sugar, sifted
1/2 tsp vanilla extract

Cacao nibs for decoration if you like!
