Cashew Brittle Recipe
Ingredients:
1 - 1/2 teaspoons baking soda
1 teaspoon water
1 teaspoon vanilla
1 - 1/2 cups sugar
1 cup water
1 cup light corn syrup
3 tablespoons butter or margarine
1 lb. roasted salted cashews
Preparation:
1. Heat oven to 200°F. Grease 1 large cookie sheet with butter and keep warm in oven.
2. In small bowl, mix baking soda, 1 teaspoon water and vanilla, set aside.
3. In saucepan mix sugar, 1 cup water and corn syrup. Cook over medium heat about 25 minutes stirring occasionally to 240°F on candy thermometer, or until small amount of mixture dropped into cup of very cold water is pliable.
4. Stir in butter and cashews. Cook about 5 minutes, stirring constantly.
5. Immediately remove from heat. Quickly stir in baking soda mixture until light and foamy.
6. Pour mixture onto cookie sheet and tilt to spread. DO NOT attempt to spread with spoon, etc.
7. Cool completely and then break into pieces.
